Golden Diner Style Pancakes

A recipe for the viral pancakes from Golden Diner in NYC

ingredients

pancake batter

makes 2 large pancakes*

  • poolish

    • 200g ap flour

    • 240g buttermilk

    • 150g water

    • 7g active dry yeast

  • 100g ap flour

  • 5g baking soda

  • 30g sugar

  • 2 large eggs

  • 35g avocado oil

maple honey butter

  • 113g unsalted butter (1 stick)

  • 100g honey

  • 65g maple syrup

  • 20g soy sauce

  • 0.25g xanthan gum (optional)*

  1. Combine poolish ingredients in a large bowl and cover with plastic wrap

  2. Let poolish sit at room temperature for 1-2 hours

  3. Add the rest of the ingredients and stir to combine until just combined

    1. DO NOT OVERMIX. It is okay if it has lumps

  4. Set oven to broil on high

  5. Heat a small oven safe skillet over medium-low heat

  6. Add 1 tablespoon of butter and allow to melt

  7. Add batter to pan and allow to cook for 2-3 minutes until bottom is set

  8. Place under the broiler until top is golden brown and no wet batter is visible

  9. Flip the pancake onto a plate and serve with maple honey butter

maple honey butter

  1. Melt butter in a saucepan until foaming

  2. Add soy sauce, honey, and maple syrup

  3. Whisk vigorously until homogenous and the mixture is one color

  4. If using, add xanthan while whisking vigorously to avoid lumps

notes

  • Each batch is enough for two pancakes on an 8 inch skillet but you can make bigger or smaller ones based on the size of the skillet you use

  • Xanthan gum prevents the sauce from splitting and keeps it homogenous and shiny. Feel free to leave it out if you don’t have it.
