Charred Cabbage w/ Peanut Sauce & Parm

ingredients

cabbage

  • green cabbage, quartered

  • kosher salt

  • olive oil

  • fish sauce (optional)

  • rice vinegar (optional)

  • parmesan

peanut sauce

  • 100g peanut butter, unsalted

  • 100g hot water

  • 35g palm sugar or brown sugar

  • 40g sriracha

  • 20g rice vinegar

  • 30g soy sauce

  • 15g ginger, grated

  • 15g garlic, grated

  • 20g lime juice

  • 5g sesame oil

  • 15g fish sauce (or salt to taste if vegetarian)

  1. Generously salt cabbage and allow to sit for 15 minutes or until wet and salt has been absorbed

  2. Dry the exterior of the cabbage with paper towel

  3. Rub oil over all surfaces and lightly season with more salt

  4. Char each surface of cabbage on grill or on a skill until dark brown

  5. Allow to cook in oven at 350F for 20-30 minutes or until soft

  6. Optionally, add a few drops of fish sauce and rice vinegar to the exterior

    1. skip fish sauce to keep vegetarian

  7. Serve with peanut sauce and grated parmesan on top

peanut sauce

  1. Add palm (or brown) sugar to bowl and pour over hot water

  2. Whisk to dissolve

  3. Add peanut butter and whisk to combine

  4. Add the rest of the ingredients and whisk to combine

  5. Taste for seasoning and adjust as needed

notes

  • Just skip the fish sauce if you want to make the entire recipe vegetarian. Just sub some extra salt
