Beef Tallow Chips
Potatoes, Salt, and Beef Tallow. Doesn’t get simpler than that.
ingredients
1lb of russet potatoes
kosher salt
beef tallow
msg (optional)

Peel potatoes and allow them to sit in cold water while you peel the rest
Slice the potatoes to desired thickness on a mandoline
Rinse potatoes well in cold water until the water runs clear to remove starch
Heat beef tallow to 375F
Thoroughly dry the potatoes with a paper towel
Fry the potatoes in batches until golden brown
Let drain on a wire rack until cooled slightly and then move to a paper towel lined tray
Season liberally with salt and a small pinch of MSG, if desired
Notes
Aim for between 1/16th to 1/8th of an inch thickness on potatoes
