Beef Tallow Chips

Potatoes, Salt, and Beef Tallow. Doesn’t get simpler than that.

ingredients

  • 1lb of russet potatoes

  • kosher salt

  • beef tallow

  • msg (optional)

process

  1. Peel potatoes and allow them to sit in cold water while you peel the rest

  2. Slice the potatoes to desired thickness on a mandoline

  3. Rinse potatoes well in cold water until the water runs clear to remove starch

  4. Heat beef tallow to 375F

  5. Thoroughly dry the potatoes with a paper towel

  6. Fry the potatoes in batches until golden brown

  7. Let drain on a wire rack until cooled slightly and then move to a paper towel lined tray

  8. Season liberally with salt and a small pinch of MSG, if desired

Notes

  • Aim for between 1/16th to 1/8th of an inch thickness on potatoes
